I am looking for any research to substantiate claims about how long it takes to recover productivity levels/concentration levels after an interruption. Can anyone point me to any research?

Take a look at "Peopleware - Productive Projects and Teams" by Tom DeMarco and Timothy Lister. It has several chapters that reference the results of some studies on the impact of interruptions and other work environment factors on productivity.
