Can anyone please explain how to remove one of say two "filtering labels" from an email sender through gmail ?

If I understand your question correctly:

If there is one filter doing two actions, you will have to edit the filter.

If there are two filters doing actions on email from one sender, delete the filter doing the action you don't want Gmail to execute - or exclude the sender in question if there are other senders you still want to filter.

All of this is done under Settings in Gmail.

Stupidly still battling with being able unable remove an unnecessary label that is automatically added when entering Inbox

No big deal . . . will 'cancel it' and start again
